This was my last tea of the day, & although I enjoyed it, I don’t really feel that I have much to say about it. I did enjoy the Cedar & the Elderberries. It is a gentle soothing cup, especially nice lightly sweetened.
Another sip down, as the rest of my sample is going to Sil.

This is actually pretty good.
Of course, I enjoy a good lapsang, & if I hadn’t already had a week’s ration of Maple syrup this morning with breakfast, I’d probably try some in the 2nd half of the cup. But there is no need to, as it is tasty plain. I love roasted chicory root, alone & in blends.
To my knowledge, I’ve never drank roasted cedar in a tea, & now I’d like to drink a cup of it alone, just to give it a real try.
Just for the record, I can still taste & feel the spearmint from this morning, & my sinuses are remarkably clear, all day!

Lazy people of the world: please join me because I am about to share the most amazing news about this tea.

There is no need to brew hot, then chill, because this makes an incredible cold brew. MIND = BLOWN

Being a lazy brewer myself, I knew I had to try this cold brewed. I placed all the ingredients in my large libre tea glass with room temp filtered water, then put the whole thing in the fridge overnight. And today: amazeballs chocolatey mapley sweet tea. I made my co-worker try it and she immediately proclaimed me to be a genius.

OK, that last part isn’t true, but she did like it and ask for more. So there you have it!!!

Edit: please note that I heaped the tsps when measuring the tea and berries, so the end result wouldn’t taste weak.

Brenden: I used a little extra tea (heaped the tsps). I should have noted that. I will edit. It actually tasted more chocolatey to me, but the berries also seemed more pronounced. I wouldn’t have called the first attempt bitter, but cold brewed it seemed a little smoother. Not sure how to describe it. Oh wait, I do. YUM :p

TTF: let me know what you think. I’m pretty impressed with my mad skillz on this one. Just think – we can brew gallons and gallons with no need to heat all that water!!!!!

Sarsonator, I cold brew pretty much anything too…I cold brewed some used leaves of Port the other day for 24 hours and it was fab!

I keep meaning to try that with Port, TTF. I wouldn’t have thought to add used leaves. Learned that from you. I tried it over the weekend with used Golden Fleece leaves. Took that hiking and it was deeeelish! I love cold brew!!!

I do that with oolongs a lot when I don’t have time to do many sessions. Also, Brenden taught me to keep all the leaves I use during the day and make a cold brew of everything mixed together. It’s fun cause it always tastes good, but never the same :-)

I hope you like this cold brewed! It’s just easier, IMO. I have these cool glass 1/2 gallon “milk” jugs that I use for cold brew teas. I’ll be making this in those jugs to take to barbecues, etc.

I’ll report back on my Tea Hodge Podge experiment. :)

My boyfriend just ran me up a mountain, in the woods, in the summer. I thought I might die. But somehow I survived, and I think it could be due to the fact that I knew this tea was getting nice and cold in the fridge for me.

MzPriss was kind enough to share some dried elderberries with me, so that I could try this out. Thanks so much, HoneyBelle!!!!

I ended up adding a little more maple syrup when I got back and tried this for the first time. But this is SO GOOD. It absolutely does taste like maple chocolates. No lie!!!! I’m glad I made a triple batch because this will be a go-to for summer. I can’t wait to make this for the next family gathering. I’m certain that everyone will love it as much as I do. :)

I am going to mess around with this as a cold brew in my libre. I often cold brew tea for work. It’s my lazy tea method since I don’t have to heat water. I think I can make it work….

Yes, he sure did like it. He’s a big sweet tea fan, in general. Except that he usually thinks of “sweet tea” as that stuff from Mickey D’s which is just sugar water with a smidgeon of tea flavoring.

I am happy to make him sweet teas that have actual tea with a little sugar, maple or agave. This one was a winner for both of us! I will be making this forevers!!!!

OK, first off, I don’t recommend spearmint first thing in the morning if you are planning to sample something new afterwards, LOL. Here I am an hour later, & my mouth is still minty fresh, which feels good, but interfered somewhat with the tasting of this tea.

Also, I followed the instructions on the packet, using 1/2 TB, & I really wish I’d just gone with a whole TB, cuz I do tend to like my teas on the strong end of the spectrum, but I want to send the other half to my tea sister Sil, & I’m trying to get better at following instructions in general.

Anyhoo, this is a tasty cup of pre-breakfast tea, though not particularly bold. Very light on the smoke, IMO, with bread notes, & milk chocolate made with that condensed canned milk. It’s nicely sweet, & I’ll have to get an oz so that I can give it a more fair review eventually.

I am sincerely hoping that my local herb shop does not run out of dried elderberries because I will be drinking this bad boy ALL SUMMER LONG – and kats and kitties – summer lasts a LONG time in Central Texas.

I make a quart of this a day and I drink it all and then hold the jar upside down so every drop goes on my tongue. I do not share.

This combination of my very favorite tea blend, the much-beloved Golden Orchid, maple syrup and dried elderberries is just the smoothest most lovely and satisfying thirst quencher I can imagine.

The vanilla fudge bomb of the Golden Orchid with the concentrated fruit of the elderberries is already amazing and the maple syrup makes it hum. Perhaps I should note that I never drink sweetener in iced tea. Yes, I’m southern but I dislike sweet tea. This is so beyond tooth-achingly sweet Lipton. This is ambrosia.

Yummy!!!

Now that some magician has handed me some dried elderberries, I was able to make the real version of this Northern Sweet Tea. Though my own temporary blueberry version was pretty darn delicious, I admit that it’s fun to have it the way it was meant to be.

It was hot today. This was the perfect iced tea.

Really, A little maple syrup added to Golden Orchid and some cute rustic tiny little berries….how could you not like this?

I drank two big mason jars today, and wanted more!! And the good thing is, I can make more, which makes me a very happy fairy :-)

Revisiting this tea after many months! I think that, like the Sleeping Bear Blend, I only had this one once or twice before I put it away. It wasn’t the right time for me to appreciate it…but that time is tonight!

Each sip starts bright and minty sweet. Clean, calming, refreshing. Like breathing fresh mountain air. There are notes of soft, delicate jasmine as the tea unfurls in its full glory. It’s buttery with a somewhat honeyed taste. Thick mouthfeel, medium body, creamy and somehow slightly smokey. (At least at first.) I’m a sucker for buttery green tea, and this one is not really vegetal or grassy at all. So it means AWESOME in my book! I don’t like grassy greens; the vegetal factor is the reason I hardly drink green tea. I don’t even like vegetables. Anyway, getting off topic. Everything is quite well-balanced. The finish is buttery sweet, lingering on for a few minutes until the cleanness of the mint takes over again. It’s not a definite mint flavor, per se, it’s more of a texture. And it’s just barely there.

This tea re-steeps well, too. I infused it for 4min 20 the second time; the mint is toned down a little and the butter-honey notes of the green tea seem more intense. This is a good blend, a very good blend. Of course I would get into it after it’s discontinued. I did this to myself. At least I still have a decent amount left to enjoy…

I like greens, but I don’t like the overly grassy, or vegetal ones either. For straight greens I tend to keep the brewing times short, starting at about 45s, though sometimes less. It tends to play up the sweet and fruity aspects of the teas for me.

“Wee snaily yums” is right.

This tea…what is this tea? It’s a slice of buttery, perfectly toasted bread, drizzled with sweet honey and maple syrup. Lightly dusted with powdered sugar. There’s a tiny hint of spice that makes me think there’s cinnamon on top too. Visualize it. Mmmmm. There’s some malt and chocolate in there, towards the end. I mean GOOD chocolate, none of that Hershey’s bullshit. My college roommate last year was a young woman from Kazakstan. She brought me a bar of milk chocolate from her country and it was better than any milk chocolate I had ever eaten. That’s what I mean. It was creamy, melt-in-your-mouth delicious. This tea is exactly that. It’s the best, buttery flaky croissant I’ve ever had. It’s the best milk chocolate and the lightest, loveliest honey.

You better have a good reason for not having this in your cupboard.

Awesome Tea! I had a great time outside watching for the moon i didn’t see her but I still had fun :)
Really good version this time around, very smooth and tasty and minty, it really was perfect tea for tonight.
My heart is pounding still from running, i’m soo out of shape and really need to quit smoking(maybe tonight) gonna lay back in my chair for a bit in the cool house now and open the curtains and watch out the window for Momma Moon.

My first time for this tea. It’s a rocketship! The mint finish just blows me away and I thought I wasn’t gonna like it. And having it watching the moonrise with tea heads is every bit of the awesome.

The moon is amazing tonight, huge & full. W have a nice clear sky here in St. Louis, with fireflies. There is no lake…no mist to hover over it, but this tea has a misty quality, & it evokes such things. To be honest, I didn’t think I would like this tea. I’m not really a big fan of spearmint, but as it turns out, it’s an interesting cup. Lightly smokey from the Keemun, I think I’d like more elderberry, & my mouth is minty fresh. I’m on the 2nd steep, & although the first steep was better, this one is still pretty interesting.

BTW, I used the entire 1 Tb sample.

This tea is delicious . I have to admit I’m partial to Yunnan blacks. Very rich and satisfying. Malty, creamy, some chestnuts. As cooled I’ve got some slight spice which was welcoming. It’s fun tea and I’m glad I picked it with my recent order. Made it western according to WP parameters. I have to try it gongfu , my usual style of brewing Yunnan blacks.

This was the chai I chose when making my Whispering Pines order. Looking back, I’m not sure why I chose this one, I must have been in a chocolatey mood! And I do enjoy the tea used as its base – their Fujian Black. Anyway! Dry, it has the small, dark Fujian leaves mixed with chunks of spices. I see whole cloves and cinnamon bark among other things. I have to say, the smell shocked me. It is so gingery! And for some reason I get menthol (I don’t think I selected to have the mint added, but I may be wrong!). It’s like inhaling Vicks Vaporub, and it definitely clears your sinuses! I am not the hugest ginger fan, so this got me worried…

The brewed aroma is less intense, but still smells strongly of ginger. I can pick up on the other spices now, particularly the clove and cinnamon. The taste is also extreme ginger. I had to add sugar and vanilla soy milk to be able to drink it, really. But once it has additions, it’s pleasant enough. I can taste the chocolate (definitely a milk chocolate with the milk added) and the ginger is quite strong but the sharpness is reduced. I would definitely drink this one latte-style from now on, so I can add more milk without watering it down.

Overall, I’m not going to rate this one because whether or not someone likes ginger is definitely a personal preference. It’s weird, I didn’t see anyone mention super strong ginger in their notes. I guess I could try stirring up the tea some more, but considering the super strong ginger and menthol aroma, I doubt that would change it. I’m definitely not in love with this one. :(

The menthol is most likely from the cardamom. It has a very cooling aroma.

Interesting that you got so much ginger out of it…Perhaps try giving the bag a nice mix-up? Or perhaps you have a more sensitive ginger sniffer? Hehe :)

Ginger makes a chai for me too. Where I was in India in late winter to pre-monsoon drought it was the most common flavouring for tea. Sometimes that was it ( except for the milk and sugar, of course)!

It’s been a long time since I’ve had this one. I pulled it out of the cupboard so I could send a sample to Dinosara, and I ended up only having one serving’s worth left over, so I figured I might as well sip it down!

Yummy rich sweet potato and wheat bread, om nom nom. Gotta love those full-bud Yunnans! :D

Yum yum, more Whispering Pines! I really love these light, golden Yunnans so far, from every company. This one has beautiful, puffy golden leaves that are covered in fuzz. Their scent is lovely – light malt and creamy honey with a surprisingly strong stonefruit note.

The first time, I followed the package instructions and steeped for 3 minutes. The aroma was honey-glazed toast with some golden raisin fruitiness. The taste: lightly malty with honey and dried fruits (apricot?). Maybe a little bit of cocoa. There was also this weird bitterness that I didn’t expect.

So I did a 2 minute steep (new leaves) to see if the bitterness would go away. Mm, love the flavor of this one. It reminded me of a buttery croissant with a touch of honey. There’s also a light toasty note that makes me imagine toasted almonds atop the aforementioned croissant. Maybe a little stonefruit in the aftertaste? This steep wasn’t bitter, but it was almost bitter. It had the potential to be bitter. But it was still delicious.

So my question is, what else should I change to prevent the bitterness? Is it overleafing maybe? I am usually a little bit generous with my leaf measurement, and since the recommendation is in volume and not weight, it’s hard to be precise with a larger leaf. Any suggestions (or measurements in grams) would be appreciated!

Hmm…It’s possible…if your filter doesn’t filter out chlorine, that could cause bitterness.

And come to think of it, lower temp could totally bring out bitterness…with most tea, the bitterness is caused by tannins, and if I remember correctly, tannic acid is water soluble at a lower temp than flavonoids. It could be that you aren’t getting enough flavonoids to hide the tannins with a lower temp.

Really smooth tea for me also…but I think I only drank this one with the gaiwan, 5g for 5oz. I would not think that lowering the temp has anything to do with the bitterness you get as it usually diminish it. I agree with Brenden on this, I’d blame the water, and don’t forget that Dasani is NOT spring water!! If anything, it makes things worst :-)

200 is my comfort zone cameron. I very rarely get bitterness in anything I brew, but I know it also has to do with tastebuds :-)

So, I was going to make this tea, and then saw Golden Orchard and decided to make that one next instead. And then I wasn’t really thinking, and poured milk and water into a pot like I had planned on doing with this tea, not GO, so I guessed that was a sign to make this first instead.

I don’t know if Brenden really is some kind of tea wizard or what, but this is all kinds of awesome. Looking on this tea’s page, I’m realizing that maybe this isn’t meant to be a chai tea, but I made it up chai latte style, and it’s one of the most unique and delicious chai teas I’ve ever had. Theres cinnamon, and what tastes like maybe clove, and something peppery. But then theres a fruitiness from the elderberry, which somehow goes with the spices perfectly. There is a lot of ingredients that I either have never had before, or don’t know what they taste like (elderberries, chicory, holy basil) so they could have easily been gross to me, but it turned out scrumptiously!

I totally thought it was a chai, and its my favorite way to make chais! 50:50 water and milk, simmered together with the tea. I usually wait for it to begin to simmer, and then steep for however long the directions say, then take off the heat, strain, and sweeten.

That sounds interesting. I am not a really big chai fan, but I think that could make them taste better to me. I’ll have to try it with one that I have.

Mz HoneyBelle Priss and I were sent this sample for review. She received hers a while ago, but waited that I get mine here in Canada so we could have our tasting together last night. Ain’t she the sweetest thing? Must have been a torture for her to wait that long…

With Elderwood, I was expecting Golden Orchid on steroids, but it turned out to be quite the opposite.

Well, Cocoa Amore is definitely my Golden Orchid on steroids. If GO had a lover, it would be this bad boy.

I’d say our Tea Whiz Of The Woods Brenden is building a trademark for himself with his Vanilla Dreams collection. This new vanilla he uses is insane. And must I insist on vanilla beans here as opposed to vanilla flavouring? HUGE distinction.

Ok…so you know how much I love dark chocolate.

And you know how much I love cherries.

A lot. I mean these are possibly my two favourite things to eat ever.

Combined together with this sophisticated exotic vanilla, they create the perfect storm of nominess. Imagine that for a second. A STORM of nominess.

Just to be clear, the cherries and the chocolate are notes, not flavouring, and this blend is a lot more satisfying than any flavoured tea out there.

The sweet black cherry and rich dark chocolate notes are rounded by the creamy and decadent vanilla, rendering a silky and velvety mouthfeel.

Also, there’s just a glimmer of spice in the background.

It’s so smooth, it never gets bitter or astringent.

Now…When I’m having a mug brew, I generally don’t re-steep. I know, I know, some of you will say, what a waste. This however, with its high end list of ingredients deserves a second infusion…and a third…and dare I say it…a fourth. Yes, excellent re-steeping value. It’s barely diluted. And I’m cold brewing the leaves just in case there’s something left in there for me.

I really don’t need a new favourite tea. No I don’t. But, but…I love my Vanilla Dreams Tea Family. There’s Papa Port, (tommy says Port is masculine) Mamma GO, lovechild Elderwood and new kid on the block Cocoa Amore. Hell yeah, I need them all!!!
