2nd infusion w/ lunch… some sort of REALLY spicy, REALLY good chicken fajitas (started out as a combo plater, but mom had the shrimp ones) that mom brought home left over from her business lunch at Applebees, but I can’t find them on the menu for some reason. Just a touch stronger than the 1st infusion.

Ugh… Madison has been getting up @ 7:30 when mom leaves for work the past 3 days. And because I took melatonin last nite I’m pretty out of it. My throat isn’t up to par, but at least I’m not hacking today. I remembered I had this and thought it would be good on my throat since I don’t have mint. Whites aren’t my 1st choice to make since I don’t have my scale replaced yet, but I’m drinking it more for functionality this morning so I figure I’ll be fine.
4TB leaf/16oz hot water (see below) then 8oz cold water (note to self: Get bigger IngenuiTEA)
The light orange liquor smells light and sweet. The base is still pretty substantial, definitely not wimpy. The honey gives it body and a slight thickness, but does not coat my throat (yay!). This is actually probably the best cuppa of a tea I’ve made w/o my scale that I use my scale for. That makes me happy.

Even though my scale is broken, I decided to make this anyway- mainly to prove the reason why I weigh whites. For my 1st infusion I made 18oz iced to take to dinner tonite. 1 heaping TB steeped in 6oz water for 3 min (when I use 2.25g/6oz I steep it for 1-1.5 min) @ 180 (again, when weighing I normally like 160) then added 12oz cold water.
2nd infusion, 1 min 20 sec usining only 6oz water. Paired w/ a pocky stick. The orangish liquor is so flavorful! Maybe it won’t be so bad after all. The honey and vanilla flavors are not as strong as my prefered way of preparing it, but the white tea is solid. It pairs pretty good w/ the pocky stick, but I wish the sweeter notes were stronger to compare w/ the bakeyness of the cookie. Bakeyness is an odd thing, it’s an ok (although not my fave) thing in the right cookie- but a quality I hate in tea. I’d probably give this method of prep a 70-75.

3rd infusion. I steeped the tea in just 3oz of water for 1 min 40 sec, decanted it in my chawan and added a tsp of their ceremonial matcha to make Koicha. My tea sifter was wet so I didn’t sift it, which it really needs, so unfortunately it was a touch chalking and bitter, but the honey vanilla white really lessoned it.
Feeling really jittery… to the point where I haven’t felt like getting up to make tea in hours. Made a big 16oz mug (using 6g leaf) hoping it’ll make me feel better).
I think I finally nailed the steeping time. This is what a white tea should look like. It still has a golden hue, but much lighter. The flavor is light and sweet. Something heavy or overly sweet would not be good right now.

Ok… Hoping this doesn’t back fire on me. I dumped out my Mayan Chocolate Chai leaves last nite, but didn’t rinse out my ingenuiTEA. I figure there are white based chais, vanilla chais, and honey goes in chai- so this should be good, right?
Woohoo! It worked. A full bodied, smooth, slightly sweet white tea with just a hint of kick. If you have both of these teas I suggest you try them back to back.

It’s still hot (although not quite as bad as yesterday) and my AC is still broke. So I decided to have this cold in honor of todays Steepster Select!

6oz hot water
12oz cold water
Mmmm… light, sweet… a thicker mouth feel due to the honey and a perfect balance of flavors. The vanilla is stronger than I expected and is balanced perfectly by the complex, rich, and savory sweetness of the honey as well as the white tea base. It doesn’t have a refreshing thirst quenching crispness to it, but it is very good. It’s a perfect tea for every white tea lover- sweet enough that it doesn’t need extra sweetener, and not overly sweet for a person, like myself, who practically never sweetens her tea. And I’m not even a honey lover! Or a honey liker really… The only thing that made me momentarily debate not giving this a 100 is that I find it too strong using their steeping parameters, but I decided against it. This makes me want to run and by ROT’s vanilla bean honey for my chai! If you decide you do need more sweetness, I’d suggest using that even though I have yet to try it. Sounds like it’d make sense and be delicious:)

Happy Tuesday! Actually took some care to brew this one right today – 1 scoop tea, no additives, hot water, infuse 7 minutes. The tea is clean, crisp, refreshing, rejuvenating even, yet has an interestingly heavy mouthfeel. I feel good, but I am feeling better with each and every sip. A hint of vegetal flavor, a sweet almost minty after taste.

After a long, but very enjoyable day yesterday, I brewed up a large pot of this around midnight. Hot, no additives, two minutes. The simplicity of this tea is divine, it is slightly sweet, with a hint of vegetal flavor, yet a light, almost floral fragrance.
Two cups in, I was fully relaxed and ready to go to sleep.

Lots of stress today, but there is good news: I finally found a white tea I truly love. The smell is natural, a bit like hay, vibrant and it smells delicious.
Infused hot, three minutes, no additives. The tea is light, airy, a brilliant white tea in a sea of otherwise bland and uninteresting white teas. Most of my previous white tea experiences have been blends of white and greens, or whites and flavors, but this is a pure white tea. There is a fruity, slightly floral fragrance of the brewed tea. There is a delicious flavor, it is light, crisp and clean.

Just made a nice batch of this iced. Spring is in the air, and, the sweetness of the peaches is definitely present, but, not overwhelming to the extent that you feel like you’re drinking “flavored tea”. This tea is light, just fruity enough, and delicious. My wife likes adding one teaspoon of Stevia, but, I drink it just as it is. Hmmmm….if it were Friday, I might mix it with a shot of vodka for a delicious tea cocktail. Just a thought. Maybe I’ll do that this weekend and let you know.

When I first steeped this tea I thought I would be turned off by a very bitter strong flavor cause of how dark it was. This is a very dark tea with the aroma of dirt when you first smell it in the canister, but in the cup it has a smooth sweet flavor that’s very pleasant!

I knew after my matcha OJ on Saturday I’d only have 12oz left so I skipped it yesterday and had 12oz today as I knew I wouldn’t get to the store yesterday. Added 2tsp and shook well. I prefer a 1tsp:8oz ratio, especially with stronger matchas, but as this one is lighter, it worked well.
I’ve had a rough 3 days all around… physically, mentally, emotionally, spiritually, and even sleep wise. Last night specifically my dog got me up in the middle of the night cuz she had to go to the bathroom and I was awake early… but luckly Madison, my dog, let me lay in bed for quite awhile. At 9am my phone rings and it’s my best friend Irina. She’s never called me in the morning before so I instantly know why she’s calling. Yep, I was right! As of last night, she and her boyfriend Brock are engaged! Seeing as she loves all things organic and drinks matcha frequently (although unfortunately just for the health benefits… she hasn’t found her love for it yet), I made a full chawan of this- 16 ounces! I haven’t had a full chawan at once since I got it back in Jan. This is also the best I’ve gotten it to froth- almost EXACTLY like at the cafe I had matcha at for the 1st time. It’s a great day! Wow… what a week! It was a wonderful week, but it’s nice to be able to sleep past 6:30am again. I was so busy, I didn’t even take time to make iced tea- and didn’t even have matcha every day! I had a family reunion Sat. after I came home so I didn’t take time to drink tea til yesterday afternoon. 1tsp in 1 cup of Minute Maid Heartwise OJ, James Bond style. My favorite way to have cold matcha!
